The Sony Ericsson product blog is reporting that the Android 2.1 update will begin this Sunday. As with most manufacturers/carriers they are doing a staggered roll out, presumably to track satisfaction and catch bugs and glitches. The SE blog states that the Nordic kits will roll out first beginning Sunday evening, Eurpoean time, and continue throughout the month of November.
There is no exact time as to when the US customers will see this update but assume based on this info it will be very very soon.
The Android 2.1 update is still not the latest available update, however it is a vast improvement from the Android 1.6 that rolled out with the Xperia X10 devices themselves. In addition the update will allow for 720p HD video recording with auto focus.

US Customers can expect the following out of the new update:
HD Video recording with continuous autofocus
Upgrade of the Android platform to 2.1
New Back up and restore application with extended content backup
5 Homescreens for apps, widgets, bookmarks, shortcuts and folders
Social phonebook which automatically syncs with facebook and shows which of your friends are currently online
Rikarg Skogberg, the author of the blog entry, warns customers that this is a “phase” rollout and you may not see the update immediately come Sunday evening.
